Summer Spinach Salad
Description
YUM!! We all loved this.
Ingredients
1/2 Cup Vegetable Oil
1/4 Cup Chopped Onion
2 2/3 Tablespoons Cider Or Red Wine Vinegar, (2 T plus 2 t)
2 2/3 Tablespoons Sugar, (2T plus 2t)
1 1/2 Teaspoons Ground Mustard
1/2 Teaspoon Salt
1 1/2 Teaspoons Poppy Seeds
8 Cups Torn Spinach, (fresh)
3 Green Onions, sliced
2 Pints Fresh Strawberries, sliced
3 Large Bananas, sliced 1/2, ", thick
1/2 Cup Slivered Almonds, toasted
Directions
Place the first six ingredients in a blender or food processor; cover and process until the sugar is dissolved. (we just shook it up in a covered bowl – but my onions were already chopped). Add the poppy seeds; process just until blended. In a salad bowl, combine the remaining ingredients. Drizzle with dressing; toss to coat. Serve immediately.
Notes
Requires more than one bunch of fresh spinach. (2?) I toasted the slivered almonds in the microwave. Spread on a plate and microwaved on high in 1 minute increments. (I believe 3 x – until they smelled really good and toasty).
