Cranberry Bars
Ingredients
Filling
- ¾ cup sugar
- 2 cups rinsed fresh cranberries
- 1 tbls grated orange peel
- ½ teaspoon cinnamon
- 1 cup chopped walnuts
- ½ cup water
- ¼ cup orange juice
- 1 tbls butter
- ¼ teaspoon salt
Dough
- 2 cups sifter flour]
- 1 ½ cup sugar
- 3 cups oatmeal
- 2 cups sifter flour
- 1 ½ cup sugar
- 3 cups oatmeal
- 1 teaspoon salt
- 1 ¼ cup softened butter
Directions
For Filling
Combine sugar and water in sauce pan. Bring to a boil. Add cranberries and cook until they pop. Add orange juice, peel, butter, cinnamon and salt. Cook 5 more minutes or until thickened. Remove from heat and add walnuts. Set aside to cool.
For Dough
- Sift flour, salt and sugar. Cut in butter with pastry blender until coarse in texture. Add oatmeal and mix thoroughly.
- Put half of the dough in an ungreased 13” x 9” x 2” baking pan, padding firmly. Spread filling and top with the rest of the dough. Bake in a preheated oven at 425 for 25 – 30 minutes or until lightly browned.
