Description
An adaptation on cacio y pepe white beans from Ottolenghi. This recipe is fully dependent on the quality of the ingredients because it’s so simple! It’ll suck if you use bad ingredients!
Ingredients
- Large dried white beans (soaked overnight to 24 hours in cold water with a hefty pinch of salt)
- High-quality broth (preferably homemade chicken bone broth)
- Bay leaves
- Parmesan rind
- Cracked black pepper
- Butter
Directions
- Soak the largest dried white beans you can find overnight – 24hrs with cold water and a hefty pinch of salt (2 teaspoons?)
- Drain beans, add the best broth you can find, preferably homemade chicken bone broth or a fancy schmancy one you buy.
- Add some bay leaves, a Parmesan rind a LOT of cracked black pepper and make sure the beans are covered with liquid. Add water if not covered.
- Simmer on LOW covered for 1-3 hrs until beans are done. If you’re making this do it on a cozy weekend day where timing isn’t a bother and taste the beans and make sure you get 5 cooked beans in a row that you like.
- Add a fat pat of butter, stir and enjoy!! I like garlic bread dipped in, and it’s okay if it’s soupy or more creamy. Enjoy!!!!
